Who doesn’t love a special weekend breakfast? We certainly do! This recipe is perfect for that - the whole family can enjoy it! These banana pancakes are sugar free, gluten-free, and egg free but definitely not free of flavor 😉

It's is perfect for baby’s first bite and can be offered as a finger food for baby-led weaning. This recipe is great for babies starting solids and beyond!

What makes these banana pancakes so good for your baby?

  • Bananas contain three natural sources of sugar – sucrose, fructose, and glucose – and are more dense in calories than most other fruits, making them an extremely efficient and sustainable source of instant energy for your growing baby.

  • Oats are a great source of two different types of fiber, which help keep baby's digestive tract going strong. Oats are also packed with antioxidants, manganese, phosphorus, copper, iron, zinc, and vitamin B1.

  • Chia seeds are high in antioxidants, omega 3-fatty acids, fiber, and magnesium and are a good source of protein and calcium. They promote digestive health, healthy and strong bones as well as overall heart health.

Course: Breakfast Prep: 20 min Cook: 10 min Servings: 4-6

 

Ingredients

1 tbsp chia seeds soaked in 80ml/4 oz of water for 10min

2 bananas

1 cup oats

1 tsp vanilla extract

1 tbsp peanut butter (optional) or a tsp lemon zest (optional as well)



Preparation Steps

1. Combine all the ingredients in a blender. Blend until smooth.


2. Allow the batter to rest for 5-10 minutes, giving the oats time to absorb liquid and thicken.


3. Preheat a nonstick pan over medium high heat. Once hot, pour in about ¼ cup of batter.


4. Cook for 1-2 minutes or until you can easily slide a spatula underneath. Flip. Cook for another 1-2 minutes on the second side.


5. Repeat until all the batter is used up.


6. Wait until it cools down completely before offering to baby. For babies without pincer grasp (6-8 months) cut pancakes into strips about the size of one or two adult fingers. For babies with pincer grasp (usually 9+ months) you may cut pancakes into bite-sized squares.


 

Notes


Suitable: for the whole family from 6 months old.


Age up: If offering this recipe to an older child (2+ years) or an adult you may add a little sweetener like honey, sugar, or maple syrup. Keep in mind that it is recommended to avoid honey for babies under 12 months, and added sugar for children under 2.


Flavor up:

  • If you want to make these pancakes even more flavorful, try one of these spices - cinnamon, nutmeg, chai spices, pumpkin pie spices.

Boost nutrition:

  • Once you have introduced dairy into your baby's diet, you may add a tablespoon of whole plain yogurt to increase the protein content of this recipe.

  • Try adding a tablespoon of pulverized nuts or a tablespoon of other seeds such as flaxseed and hemp seeds. They will add texture, plant protein, fiber, healthy fats, vitamins and minerals.

Involving your children:

  • Under 6+ months: have them watch you prepare; Show them how you combine all the ingredients in a blender. Tell them when you are turning the blender on or off; let them press the button. Tell them the names of the ingredients as you add them to help build baby's vocabulary. Make some extra of the chia seed mixture and let baby play with it for a fun sensory activity.

  • 18+ months: have them watch you prepare; Show them how to and let them try to combine all the ingredients in a blender; let them turn the blender on and off; Show them how to and let them try to measure the spices. Tell them the names of the ingredients as you add them to help build their vocabulary. Make some extra of the chia seed mixture and let them play with it for a fun sensory activity.


Focus on offering single ingredient foods or very simple recipes (1-3 ingredients) at the early stages - the first 1-2 months of starting solids. You may offer more elaborated recipes on a more occasional basis for babies beginning to eat. This will help your baby get familiar with the natural taste of foods but still getting it "pimped-up" in recipes every once in a while. It will also allow you to expose your baby to a few different foods, and make it easier for you to rule out some possible food allergies or intolerance before you start offering preparations with several ingredients regularly.


The hydrated chia seeds will already help these pancakes to be fluffy without using eggs. But if you would like to make these pancakes even more fluffy, try adding a tablespoon of apple cider vinegar (or lemon juice) and 2 teaspoons of baking powder.


Pancakes are freezer friendly and freeze beautifully. Ensure the pancakes are wrapped in parchment paper and stored in a ziplock bag or shallow container.
